Garlic Rosemary Crusted Roast Rack of Lamb

Growing up in Dublin, Ireland, the Christmas/New Year ritual was always to have plenty of Turkey and Ham and to this day its not Christmas or the holiday season for me without some of that delicious combination! You were always guaranteed a Turkey-Stuffing sandwich at any home visited over the holiday season.

Forget the famous sandwich from Friends; you haven't tasted anything so delicious until you have tasted a Turkey-Stuffing sandwich on Brennans White Bread! OMG there is no bread on the planet to equal it. Of course with plenty of Kerrygold slathered over each slice, with or without some HP Brown sauce.

What happened to the Garlic Rosemary Crusted Roast Rack of Lamb you are asking? Well since America likes their Turkey pretty much at Thanksgiving; over the years I have had to switch my thinking some. So for Christmas I usually go with a nice Lamb dish. With that said, I came across this easy to follow Lamb recipe, and hopefully it will be as easy and as delicious as it looks, when I try my hand at it.

Full disclosure, all I am thinking about now is an Irish Turkey-Stuffing sandwich hahaha.
